What's Cool Henry and Verena Gaibor didn’t start out as coffee farmers—they began as a war surgeon and nurse, crossing paths while volunteering with Doctors Without Borders in Burundi. Years later, after running a clinic together in Quito, they turned their focus to coffee, bringing the same level of dedication and precision to their farms, Maputo and Hakuna Matata. On their micromill in Ecuador, they oversee every step of processing and drying themselves, producing standout lots of Typica, Bourbon, SL-28, Sidra, Kaffa, and Caturra.
