About This Coffee: Juan Puerta’s passion for coffee innovation shines in every sip. The coffee is picked at peak ripeness & undergoes a 3-day dry fermentation. After pulping, it moves through a meticulous osmotic dehydration process with ripe peaches before finally drying under the sun for an average of 15 days. Carefully monitored fermentation enhances the coffee’s natural sweetness, creating a vibrant, complex, & highly approachable cup.

Lizzy's Notes: Fermentation in coffee is a natural process that happens after the cherries are harvested, where the fruit is broken down around the bean to develop flavor. While the term might sound similar to winemaking or brewing, coffee fermentation does not produce alcohol—just amazing taste!

How to Order:  Gem Edition Coffees are extremely rare coffees, purchased in very small lots. We offer very limited weekly roast dates for each release. Once ordering is open, place your order for your desired roast date quickly before supplies run out. Once you've ordered, you're in! Get excited to receive your special 8 oz Gem Edition coffee in our beautiful custom designed can (when the coffee is gone, use it to store something fun, or recycle curbside with your other cans).
